Kobaien's nigiri-zumi experience takes place at its Tsubaicho ink workshop during the manufacturing season. An artisan prepares the ink and visitors gently grasp the soft material to leave their hand's shape. The maker dries it and sends it later; it is not a take-home-on-the-day class. The company also says a reservation can include a look at the production process. Confirm what stage can actually be viewed on your date, because the factory is a working space and its process is not freely open to walk-ins.
